Vegan soy/gluten-free Vanilla Muffins with Chocolate swirl

Sadly, most of time, my younger son cannot enjoy the cakes from his classmates' birthday parties because of his food allergies against milk and egg products. I usually prepare a nice cupcake/muffin like this for him whenever there is a birthday celebration in his class so he won't feel so left out.
