Taiwanese Cool Noodles: Vegetarian and Allergen-free

The weather is getting warmer here and it affects our appetites. Nothing feel better to have a plate of Taiwanese cool noodles with a little spicy sauce when it's hot!

I do not use the traditional noodles for it but Italian spaghetti. It's a lot easier to acquire and actually fits pretty well! I also did not use the major traditional ingredients, sesame seeds, as it's a huge allergen for my little one.

Allergen-free (but with gluten/tree nuts/tiny amount of soy sauce)
