I have not yet had a chance to be formally trained as a cook.
For home style cooking, I either learned from my mom or I created them just by observations and imaginations. The time I got to learn from my mom was way too short, about 5 years, as she passed away when I was only 13.
Thanks a great deal to the invention of internet and Google particularly. I get to learn from the unselfish master cooks or even unknown but passionate cooks everywhere and anywhere in the world.
Here are my major teachers:
Home cooking: My mom
Baking and cooking in Taiwanese style: Teacher Chou, a wonderful chef and teacher. She has three books published.
Mandarin: http://homeeconomics.pixnet.net/blog
English: http://homeinenglish.pixnet.net/blog
Gluten-free baking: Bette Hagman
I modified receipts from the following two books to fit my son's multiple food allergies.
The Gluten-free Gourmet Makes Dessert
The Gluten-free Gourmet Bakes Bread
Toasts/Bagels: Taiwanese pride: Baochun Wu, the 2010 Coupe Louise Lesaffre Champion
His story itself is a great inspiration.
He gave out about 10 of his recipes. I only get to try the toast and bagel. The results are the best of all recipes I have ever tried. I hope one day I can have the opportunity to learn baking from him.
